In search of the perfect waffle recipe

I’ve been searching oh yes I have, high and low far and wide for the perfect waffle recipe. All four of us like waffles but there are two waffle lovers in this house Kaden and yours truly.  I have tried several and I just did not like the taste.  Finally I think I have come upon the one recipe I think is a keeper.

I found the original recipe at Allrecipes one of my favorite recipe sites.  It is a great basic recipe but I decided to tweak it.  So far we love these. They come out golden brown and crunchy on the outside and fluffy on the inside. 

The only thing I am not crazy about is that they tend to burn slightly if you leave them in the toaster too long. I like to cook up a big batch of waffles and freeze for busy mornings. If you do not toast them long enough they are not hot enough (at least for me).   I have tried microwaving them frozen but I do not care for them that way as they get rubbery.

Waffles

  • 2 cups all—purpose flour
  • 4 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 1/2 cups milk
  • 6 tablespoons vegetable oil
  • 2 eggs, separated
  • 2 tablespoons sugar
  • 1-2 teaspoons vanilla

Preheat waffle iron. In a large bowl mix together flour, baking powder, salt and sugar.  Stir in milk egg yolks, vanilla and vegetable oil.

In a separate bowl beat egg whites into stiff peaks. Fold in egg whites with a spatula.

Spray preheated waffle iron with non stick cooking spray. add a scant 1/3 cup onto waffle iron. Cook until golden brown.

This recipe doubles easily and freezes beautifully.
