In the bowl of an electric mixer, sprinkle gelatin over 1/2 cup cold water. Let stand for 10 minutes. Combine sugar, corn syrup and 1/4 cup water in a medium sauce pan. Bring to a boil. Continue boiling for about one minute.
Carefully add boiling mixture to gelatin and mix at high speed for 12 minutes. Add vanilla or other flavoring. scrape into plastic lined pan. After pouring mixture into pan, place another piece of oil lined plastic wrap over the top and smooth out marshmallow.
Allow to sit for a couple of hours. Turn marshmallow out of pan onto a confectioner sugar lined surface. Sprinkle more confectioners sugar over the top and spread all over marshmallows. Cut marshmallows as desired. Dredge each piece of marshmallow in confectioners sugar. Put into an air tight container.
line a 9 x 13 inch pan with with oiled plastic wrap. The pan pictured above is actually larger than a 9 x 13. The orginial recipe calls for a 9 x 13. If you use a 9 x 13 you will have very thick marshmallows. I wanted to make more marshmallows a little thinner, hence the larger pan. To oil the plastic wrap I just used non stick spray.

beat on high speed for 12 minutes at almost 12 minutes. Add the vanilla or other flavoring. I used cherry flavoring for this batch.
