Homemade Marshmallows

I thought I'd share my homemade marshmallow recipe. We made these for the first time last Valentine's Day. They are so easy. We made them this year to sell at our fire company's oyster dinner. They were a hit, they all sold. Below I have provided a tutorial.


Marshmallows
3 Envelopes unflavored gelatin
1/2 cup cold water
2 cups ganulated sugar
2/3 cup light corn syrup
1/4 cup water
1 TBSP vanilla or flavoring of your choice
line a 9 x 13 (or larger) inch pan with oiled plastic wrap.

In the bowl of an electric mixer, sprinkle gelatin over 1/2 cup cold water. Let stand for 10 minutes. Combine sugar, corn syrup and 1/4 cup water in a medium sauce pan. Bring to a boil. Continue boiling for about one minute.

Carefully add boiling mixture to gelatin and mix at high speed for 12 minutes. Add vanilla or other flavoring. scrape into plastic lined pan. After pouring mixture into pan, place another piece of oil lined plastic wrap over the top and smooth out marshmallow.

Allow to sit for a couple of hours. Turn marshmallow out of pan onto a confectioner sugar lined surface. Sprinkle more confectioners sugar over the top and spread all over marshmallows. Cut marshmallows as desired. Dredge each piece of marshmallow in confectioners sugar. Put into an air tight container.

Sprinkle 3 envelopes of unflavored gelatin over 1/2 cup of water. Let stand for 10 minutes.


line a 9 x 13 inch pan with with oiled plastic wrap. The pan pictured above is actually larger than a 9 x 13. The orginial recipe calls for a 9 x 13. If you use a 9 x 13 you will have very thick marshmallows. I wanted to make more marshmallows a little thinner, hence the larger pan. To oil the plastic wrap I just used non stick spray.

add two cups of sugar to a sauce pan.
followed by 1/4 cup of water

and 2/3 cup of light corn syrup.

combine well


bring to a boil, stirring constantly, boil for one minute. Remove from heat.



this is what the gelatin will look like after 10 minutes

carefully pour boiling mixture into gelatin

beat on high speed for 12 minutes

this is what it will look like about halfway thru

at almost 12 minutes. Add the vanilla or other flavoring. I used cherry flavoring for this batch.

pour into plastic lined pan. This is very sticky. I used to spatulas to smooth it out. Add a second layer of oiled plastic wrap and finish smoothing out. Let stand until firm, a couple of hours.

turn out of pan onto a confectioners sugar surface. lightly sprinkle confectioners sugar over the top.

cut into desired shapes. You can either use a cookie cutter or just cut them into squares. We made hearts since it was near Valentine's Day.

dredge each marshmallow in confectioners sugar. If you are using a cookie cutter you will have alot of ends. I just cut them into small squares for us. Enjoy!
