Today I dug this recipe out for someone and thought I'd post it here. This is the best ever chocolate chip pumpkin cookie recipe. I am making it for our library's bake sale next month. It is very easy and so Yumm-O! Enjoy!
Chocolate Chip Pumpkin Cookies
1 (15 oz) can prepared pumpkin
2 large eggs
3/4 C vegatable oil
2 C sugar
2 tsp cinnamon
1/2 tsp ground cloves
1/2 tsp ginger
4 C flour
1/2 tsp salt
1Tbsp baking powder
2 tsp baking soda
1 (12 oz) package semi sweet chocolate chips
1 C chopped walnuts
1. Mix the pumpkin, eggs, oil, sugar & spices together until well blended
2. In another bowl, mix the flour & leavenings together. Add dry ingredientsto the wet ingreidents and mix.
3. fold in chocolate chips & nuts
4. Drop by spoonfuls on well-greased baking sheets (or instead of greasing them you can use parchment paper). Bake 11 minutes @ 375 degrees or until edges begin to brown.Remove cookies and cool on wire racks.
